The 2011 winner is Sam Smith, a 4th Year Apprentice at Pilu of Freshwater.
Not only is he a talented apprentice but he is fortunate to be working under the guidance of Giovanni Pilu.

Young Talent Award Information
The Council of Italian Restaurants in Australia aims to expand Italian culinary culture, increase public knowledge of both traditional and evolving values in Italian food and encourage informed experimentation in the industry. CIRA, with the Young Talent award, aims to foster young chefs and increase their knowledge of Italian food in Australia.
The 2011 winner will receive the CIRA-ALMA Experience Scholarship Prize inclusive of a two-week course at the prestigious ALMA International School of Italian Cuisine in Parma Italy, accommodation and return airfares. Acqua Panna-San Pellegrino presents this prestigious prize. The judging panel in 2011 includes the renowned Janni Kyritsis who is organising the competition.
Eligibility to enter is open to young chefs aged between 18 and 30, current residents of Australia (i.e. Australian citizens or permanent residents) who are employed in an Italian restaurant. The judging panel is well qualified as it includes 2 respected chefs and a celebrated food critic under the direction of the often-recognised Janni Kyritsis.
